Summary


Briam or briami -- roasted vegetables Mediterranean style -- is a wonderful, simple way to enjoy the summer's bounty. Just now, gardens and market stalls are filled with all manner of fresh and likely vegetables. Any number of veggie combinations can be pan- roasted in the oven or even on the grill. The great thing about this dish is you use what you have on hand: tomatoes, potatoes, carrots, eggplants, zucchini, summer squash, onions -- whatever.

This dish is popular throughout Greece and other Mediterranean countries, and these freshly roasted vegetables are good on their own or as a side dish with grilled fish, chicken or lamb. This dish is always seasonal: We make it with summer vegetables now and cool weather vegetables this fall and winter and spring.
