The co-founder of Charcutepalooza, a grass-roots movement aimed at inspiring home cooks around the world to enter the seemingly exclusive, seemingly mysterious world of meat-curing, has a lot of experience answering odd meat-curing questions. In November she and friend and fellow food blogger Kim Foster devised the idea of picking a meat-curing challenge for each month of the following year.
