The co-founder of Charcutepalooza, a grass-roots movement aimed at inspiring home cooks around the world to enter the seemingly exclusive, seemingly mysterious world of meat-curing, has a lot of experience answering odd meat-curing questions. In November she and friend and fellow food blogger Kim Foster devised the idea of picking a meat-curing challenge for each month of the following year. They'd post a new challenge online (at www.mrswheelbarrow.com), provide some background and invite participants to share their experiences. They launched the project in January, thinking they'd help a handful of obsessives cure their first bacon. But a funny thing happened: The project exploded.
